Brinjal- 2 or ½ Kg

  • Onion-2 or 100 gm
  • Tomato- 2 or 100 gm
  • Ginger Garlic Paste-1 tablespoon
  • Oil- 2 Tablespoon
  • Red Powder- 1 teaspoon
  • Turmeric Powder – ½ teaspoon
  • Coriander Powder-1 teaspoon
  • Cumin seeds- ½ teaspoon
  • Choped Green Chilli- 2 pcs
  • Choped Green Coriander 
  • Salt- To Taste

Making Method of Baigan Bharta

1-Roast the brinjal on a gas stove or on a coal burner or in an oven on low flame. Here, I am roasting it on a gas stove. When the brinjal is well roasted, remove the burnt skin and mash it well in a vessel and keep it aside. If you want, you can also roast tomatoes along with it. I am using chopped tomatoes here.

2-Chop the Onion and Tomatoes Finely.

3-Then heat oil In a Pan add cumin seeds and fry it, then add chopped onion and fry till they turn light brown.

 

4- When the onion is fried, add chopped tomato, ginger garlic paste and cook while stirring it well.

5- Now add spices, salt etc., add some water and cook till the oil separates.

6- Now it is time to cook the mashed brinjal, so put it in the cooked gravy and cook it.

7- Now mix it well in the gravy and cook for a while and check the salt. When the spices and mashed brinjals mix well and start giving fragrance, then understand that your tasty brinjal bharta is almost ready.

8- Now one more thing has to be done to enhance its taste even more, at this point we will give it a smokey taste, for this take a piece of aluminium foil stuffed with cooked brinjal, put burning coal in it and put a spoonful of Desi Ghee on the coal, as soon as smoke starts, cover it well. Keep the lid on for 3-4 minutes.

9- Add chopped coriander and chopped green chillies and serve with roti. Your tasty baigan bharta is ready.
