In the early stages of human development, man first included meat in his diet because at that time he had not learned to do farming, for centuries he survived by eating raw meat. But as his mental development increased and man learned to light fire, after this he started eating meat by roasting it, hence Seekh Kabab can be called the first dish of human history.

Ingredients Required

Mince Buff Meat / Mutton / Chicken-1 Kg with Fat 150g mixed

•Onion-150g

•Ginger 100g

•Green Chili- 50g

Grind onion, ginger and green chillies along with the meat.

        Spices Powdered
•Coriander Powder- 1 Tbs or 6g
•Turmeric Powder- 1 Tsp or 3g
•Yellow/ Red Chili Powder- 10g

         Whole Spices

•Black Pepper- ¼ Tsp or 0.6g
•Clove- 5pcs or 0.5g
•Cinnamon Stick- ½ inch pcs or 0.5g
•Nutmeg- ⅓ Pcs or 0.5g
•Mace- ⅓ Flower or 0.5g
•Green Cardamom- 3 Pcs or 0.5g
•Star Anise- 1 flower or 0.5g
•Long Pepper( Pipli)- 0.5g
•Piper Cubeb(Kabab Chini)- 6 pcs or 0.5g
•Fennel (Saunf)- ½ Tbs or 6g
•Dry Wild Melon ( Kachri)- 4g
•Salt- To Taste or 10g

Grind the whole spices well in a mixer and mix them with the rest of the ground spices. Then mix these spices well with the ground meat. Apply a thin layer of curd on the marinated meat and keep it in the fridge for 2 hours.
After this, light the coal in the stove, put the marinated meat on a skewer and roast it on the coal,
Serve with green chutney, chopped onion, Rumali roti.
