Chicken Handi
Hello friends, today I am going to tell you the recipe of Chicken Handi. Although it is popular all over India, especially in North India, but it is mainly a dish eaten in Punjab. The method of making it is completely Desi or local, so let’s make Handi Chicken in restaurant style. Here we are telling the recipe of 1 kg chicken but the quantity has been taken more in the images, take special care of this.So let’s get started
Ingredients
For 1 kg Chicken
- Onion 200 Gms
- Pure Ghee (Desi Ghee) 200 Gms
- Tomato- 2 pcs
- green Chili- 4 or 5 pcs
- Ginger Garlic Paste- 1 Tablespoon
- Chopped Garlic- 1 Teaspoon
- Curd- 200 Gms
- Cumin- 1 Teaspoon
- Red Chili Powder- ½ Teaspoon
- Turmeric Powder- ½ Teaspoon
- Coriander Coarsely Ground- 1 Tablespoon
- Garam Masala- ½ Teaspoon
- Dry Fenugreek (kasuri Methi)
- Cream- 50 Gms
- Salt To Taste
Making of Chicken Handi
Heat pure ghee in a vessel and add chopped onion and fry till it turns pink and take it out and keep it aside. Then add chopped garlic in this ghee. When garlic turns brown, add chopped tomatoes, ginger garlic paste, chopped green chilies, cumin seeds, coarsely crushed coriander, turmeric powder, red chili powder, salt and cook while stirring. Then add fried onion and water so that the gravy does not burn and let it cook. When the gravy is cooked a little, add curd and cook. When the oil starts separating from the spices, add chicken pieces and fenugreek and let it cook on medium flame after covering it. Check the salt. When the chicken is 80% cooked, add cream and garam masala and cook for a while. When the oil separates, add milk or water to make the gravy lighter as per your taste and cook. Your aromatic chicken handi is ready to eat. Garnish with chopped coriander and serve with tandoori roti.
